Curry Chicken 咖喱鸡

Looking out the window, it is all hazy outside. The PSI hit an unhealthy level of 138, some buildings located further away from the house had become unrecognizable blurry grey patches. Every year around this time, when the rain is scarce, forest fire burning in Sumatra and Kalimantan bring upon serious haze problem to its neighboring countries, especially Singapore and Malaysia. The fires are caused by their land clearing and 'slash and burn' agricultural practice.

So what can we do? Nothing much as a civilian I guess. At the very least, close the window and turn on air-purifier!

With all the windows shut and dishes being cooked in the kitchen, the smell of the food can easily fill the whole house. So technically speaking, curry is not an ideal food to cook unless you would like to choke everyone in the house with its spicy aroma. But again, why not? ;P

Curry Chicken

  • 50g curry powder
  • 70g water
B Spice Paste
  • 10 shallots
  • 2 lemongrass
  • 3cm galangal
  • 2cm ginger
  • 1 tbsp belacan
  • 3 candlenuts
  • 4 kaffir lime leaves
  • a handful curry leaves
  • 75g oil
  • 1/2 chicken
  • 2 cups water
  • 130g thick coconut milk
  • 1 tsp salt
Cooking Directions
  1. Mix together A to form a paste.
  2. Blend ingredients B.
  3. In a pot, heat oil and stir fry ingredients B and C until fragrant.
  4. Add in chicken and stir fry for a minute.
  5. Add water and let it simmer for 30 minutes.
  6. Add coconut milk, season with salt, and let it simmer for 10 minutes.
  • 50克咖喱粉
  • 70克水

B 香料膏
  • 10青葱
  • 2香茅
  • 3厘米高良姜
  • 2厘米姜
  • 1汤匙马来栈
  • 3 巴力果

  • 4叶青柠叶
  • 一撮咖喱叶

  • 75克油
  • 1/2只鸡
  • 2杯水
  • 130克浓椰浆
  • 1茶匙盐

  1. 把A混合成泥状。
  2. B用搅拌器打成泥.
  3. 在一个锅里,热油翻炒B和C爆香。
  4. 加入鸡肉翻炒一分钟。
  5. 加水,再用文火煮30分钟。
  6. 加入椰浆,加盐调味,并再用文火煮10分钟。
